In the United States, laws vary between states, so make sure you get someone who is current on your local laws.
We would also like to provide with you with an excellent link to the Reporters Committee for Freedom of the Press, which is a nonprofit organization dedicated to providing free legal assistance to journalists. The RCFP lists each US state and their laws about recording phone conversations. Some states have an "all-party" consent, while others only require that one party of the conversation is aware of the recording.
